Southeast Portland favorite Bamboo Sushi is already widely known for its sustainability practices and it’s finally getting more substantial recognition. They have just been ranked the #1 most sustainable restaurant in the entire country. Not the state. Not the Pacific Northwest. Not the west coast. The entire country.

The ranking was made at website Food Republic who listed Seattle’s Tilth at number five and Root Down in Denver, Colorado at number eight. All the other listings came from places farther east, so it’s pretty awesome to see the Pacific NW represented well. Anyone who has visited the sushi hotspot off of SE 28th, you know that they’re proud of the sustainable practices that make them so special.

They have been long-considered the most sustainable seafood restaurant in the US, with connections to a variety of organizations including the Marine Stewardship Council and Green Restaurant Association. They also work with local farms for things like their Kobe beef and use 100% renewable energy from PGE. If you’ve ever been to Bamboo you know that their chopsticks are made from sustainably harvested wood, and their to-go boxes are biodegradable.

Every single detail in Bamboo’s space and business plan is centered in sustainability. Sure, it’s a bit more expensive to eat there than a place with tiny plastic plates on a train, but the quality is infinitely better. It’s no doubt that I’m not alone in this belief since there is always an insane wait on the weekends.

So good work, Bamboo. We applaud your efforts and I’ll see you next week for dinner. I’ll be the one drooling.
